GRAPE-VARIETY : 100% Arneis Roero Arneis  DOCG “Piasì”CLIMATE: the microclimate of the Roero is just about perfect for the production of high quality wines. First-of-all, rainfall in this area is below the national average, and nearly every summer is hot, with plenty of days of sunshine. Most of the rain falls in the spring, while the quality of the grapes is not affected by the brief thunderstorms that tend to break out during the summer . WINE-MAKING TECHNIQUE: when the grapes arrive in the winery , they are immediately pressed and the juice is conveyed into heat- conditioned tanks , where the larger suspended solids settle statically within 12-18 hours. The clear must is then inoculated with selected yeasts, and fermentation is begun at a temperature of no higher than 20°C. Upon completion of the fermentation the wine is racked, cleared and stabilised, and will be ready for bottling in the early months of the new year . TASTING NOTES: straw-yellow with golden highlights, it has a delicate, complex, inviting nose with overtones of flowers blending with touches of fresh fruit. Its taste is nicely bitterish and herby , with a dry , delicate flavour . PAIRINGS: recommended with starters, cooked fi sh and delicate meats. WINE-PRODUCER, OENOLOGIST : Gianluca Battaglio
